The wine cellar here is worthy of becoming a destination of its own, boasting over 1,000 bottles making the terroir-driven range that features back vintage wines alongside labels that follow world trends. Every divine mouthful is paired with the perfect wine carefully selected for a delightful experience.
We raise the bar higher with Singapore’s first rooftop spritz bar, serving our signature take on the classic cocktails. The spritz experience at VUE is highlighted by a show preparation of charcuterie and cheese boards by the culinary team. Over the sunset hours from 5pm to 7pm, spritz cocktails come with complimentary servings of Wagyu crostini.

Framed by what is arguably Singapore’s most spectacular city skyline view, Chef Sam Chin specially curates a menu that celebrates seasonal produce, mouth-watering meats, and the freshest seafood.
Each day as the sun goes down, Chef Sam unveils his binchōtan-smoked Kokuou Wagyu beef—known as the pinnacle of Japanese beef—that is slow-roasted for over 20 hours and served with rice salt flakes. Limited to some 20 portions per day using the choicest cuts, the sunset carvery at VUE is certainly not to be missed and gives preview to the gastronomic delights to come.

Our Team
Taking centre stage at VUE is Executive Chef Sam Chin, who brings with him over 10 years of experience specialising in modern European cuisine. He takes pride in bringing to life VUE’s philosophy of serving a chef-driven menu designed to fully showcase the true flavours of premium ingredients and delight guests with every dish.
Chef Sam’s talent and charisma saw him handpicked for the culinary dream team that clinched gold for Singapore in the inaugural Dubai World Hospitality Championship 2013. Enriched with experiences gained from working alongside the likes of Lauren Peugeot and Chen Kentaro, both celebrated chefs of Michelin-starred restaurants, Chef Sam continues to impress diners with his innovative creations and masterful technique.

Hospitality with artistry, just as much as culinary perfection, is a key focus at VUE. Derrick Lim, our Assistant General Manager, is a fine example of this.

At the forefront of VUE's wine programme is head sommelier Alan Au.
He broke into the scene as the winner of the Singapore Best Sommelier Competition (ASI) in 2011. Alan had previously represented Singapore and served as a panel judge at international competitions from Mendoza, Argentina to Provence, France.
Alan is a proud advance sommelier, certified by the Court of Master Sommeliers.
